Cod Flemish Style for national dish contest

Clean, fillet, wash and make portions of cod. Chop the shallots. Chop the herbs. Peel the lemon “à vif”. Make “chateau-shaped” potatoes. Butter a pan and sprinkle with the shallot. Put in the cod with the inside part on top. Sprinkle with all the chopped herbs. Put in the slices of lemon. Sprinkle with the panko or bread crumbs. Put in a lump of butter. Moisten with fish stock and white wine. Bring to a boil again and let it cook in the oven.
